So that you can include the variable x in the text brackets, without having to open and close multiple \text{}. For instance:
\text{a quadratic equation} x^2 + ax + b = 0 \text{has at most two roots}
produces the same thing as
\text{a quadratic equation $x^2 + ax + b = 0$ has at most two roots}
