What function can I use to approximate a curve to fit N points of (x,y) coordinates. I would prefer to avoid any matrices of vectors. I also need it to be non-iterative (Is that even a word?).
I would assume there is some kind of Sigma polynomial approximation function... but I don't know and after an hour of Googling I still can't find one.

Since Isaac Newton, humanity prides itself on the fact that we know everything about polynomials. Fits are first done in terms of them first. There are many ways to fit a polynomial to any set of reasonable data. I prefer the methods that utilize simultaneous equations. If you provide me with the points, I will try to fit them. I have much software for the job and a lot of experience.
